Baked & Shredded BBQ Chicken

As much as I love my crock pot, sometimes I want the same results at a fraction of the time.  The solution?  This recipe.

I love BBQ, especially pulled pork, but in an effort to eat healthier, I’ve substituted in chicken breasts.  I confess the chicken isn’t as tender as it would be if I had slow cooked it, but for 30 minutes, I’m willing to take that trade-off.  You may be thinking:

“Why doesn’t she just serve the sauce on top or on the side if she’s going to bake it?”

I had the same thought… then I realized that by shredding the meat, the sauce could really coat so much more surface area and that means more flavor!

This is a great weeknight meal because there’s no prep work.  Literally, none.  Just place your chicken breasts in a greased baking dish, cover with aluminum foil, and bake at 400 degrees (F) for 30 minutes (or until juices run clear).

Once the chicken is cooked, place a chicken breast on a cutting board and shred with two forks.  Repeat with remaining breasts.

Now it’s time to add the good stuff.  Place your shredded chicken in a bowl and pour in your favorite bbq sauce (I used Sweet Baby Ray’s Honey BBQ).  Mix well to ensure all of the pieces are coated with sauce.

Microwave the mixture for one minute and give it another stir.  Guess what?  Your main dish is done!  Just pair with some veggies and you’ve got an easy dinner.

Baked & Shredded BBQ Chicken

Ingredients

  • 2 raw boneless skinless chicken breasts
  • 1 cup of your favorite bbq sauce (Such as Sweet Baby Ray’s Honey BBQ)

What to Do

  1. Preheat oven to 400 degrees (F).
  2. Place chicken breasts in a greased baking dish and cover with aluminum foil.
  3. Bake for 30 minutes (or until juices run clear).
  4. Place a chicken breast on a cutting board and shred with two forks.  Repeat with remaining breast(s).
  5. Place shredded chicken in a bowl and pour in the bbq sauce.
  6. Mix well to ensure all of the pieces are coated with sauce.
  7. Serve on a sandwich, with veggies, or with a salad.
